Everyone Loves a Sandwich Meal so Try One of These:
Entrée Sandwich Meal: Thin-sliced Roast Beef on a whole grain roll w/Provolone Cheese +Lettuce + Tomatoes + Mustard &/or horseradish. Finish the meal with Celery dipped in Hummus + a Fall Apple.
Soup & Sandwich Meal: Cup of Butternut Squash Soup & Whole Wheat Pita stuffed w/ Grilled or Sautéed Portabella Mushroom + Tomatoes + Sprouts + Cucumbers. Finish the meal with a Fall Pear.
Grilled Veggie Sandwich Meal (on a warmer fall day): Grill your veggies like this: Lightly spray oil onto a sheet of aluminum foil, then add cut-up broccoli, onion, zucchini &/or yellow squash. Sprinkle w/herbs, salt, pepper. Seal each packet and cook on the grill. Make a sandwich on your favorite bread or roll. Finish the meal with a banana/yogurt ‘sundae.’
Grilled Kabob Wrap Meal (on a warmer fall day): Thread a skewer with chicken cubes, fresh pineapple, green Bell peppers and mushrooms. Brush with a favorite sauce and grill, turning to cook evenly. Wrap up the grilled kabob in a whole wheat tortilla and add plain yogurt for zing. Finish the meal with a fruit salad and homemade cookie.
