Early Summer Meal Tips:
- Make a huge salad for dinner. Start with local greens like spinach, lettuces and arugula. Then, on top, pile up chopped tomatoes, cucumbers, Bell peppers, and mighty mushrooms. On the very top, add some nonfat cottage cheese, canned tuna, canned salmon, soybeans and/or nuts. Dress your masterpiece with fresh lemon juice and extra virgin olive oil. Yum!
- Think healthy on the grill. There are many options for cooking healthfully on the grill. Try a skewer theme with shrimp, tiny tomatoes and sweet onions. Try a piece of fresh or fresh-frozen salmon with fresh dill, olives and olive oil, cooked in aluminum foil ‘tent.’ Cook your meal sides on the grill, too. All veggies work great in the aluminum foil ‘tent’ that’s pre-sprayed lightly with oil.
- Have a picnic supper. Kids of all ages LOVE a picnic. So, gather fun, finger foods and have a blast. Here are some possibilities: cubes of cheese; carrot and celery sticks with peanut butter to dip; whole grain crackers and hummus; coleslaw; fruit kabobs with melon cubes, seedless grapes and strawberries. You can even make a simple pizza and add it to the picnic!
