Where I live in North Carolina, late summer is overflowing with tomatoes. But, it isn’t a big problem because there are so many ways to use them up!

Tomatoes are a very hydrating 95% water and they are one of the most versatile fruits out there. Yes, scientifically speaking, tomatoes are a fruit but most of us think of them as a juicy & sweet vegetable.
10 Ways to Use Tomatoes
Here is a handy list of ways to use up the late summer tomatoes in your garden, at your farmer’s market, or sitting on your kitchen counter. Take note that fresh tomatoes are best stored at room temperature.
- Cut up a tomato and add it to your green salad.
- Slice a tomato and add it to your sandwich or wrap.
- Cut up a tomato and add it to your cole slaw.
- Slice a tomato and add it into the layers of your lasagne.
