Potato Salad Can Be Made Many Ways!
I cannot imagine a summer cookout, picnic or simple dinner without homemade potato salad. Can you? I used to make it with mayo and then, at some point, started using light mayo for a healthy twist. After that, I put an even healthier twist on my recipe by using plain and nonfat, Greek style yogurt. And, lately, I’ve hit on a tasty recipe for potato salad where I don’t use mayo at all. Or Greek yogurt either. Instead, I’m going the vinaigrette route and jazzing it up with fresh chopped herbs, garlic and a little mustard. My recipe is below.
Potato Salad 3 Ways!
#1 Traditional & Healthy: Mix together cooked and peeled potatoes that are cut into bite-size pieces with chopped celery, onion, hardboiled egg, light mayo, salt and pepper. Chill.
#2 Colorful, Trendy & Healthy: Mix together cooked, unpeeled potatoes of any color with chopped colorful Bell peppers, onion, olives, plain and nonfat Greek style yogurt, salt and pepper. Chill.
#3 Cindy’s Potato Salad with Mustard Vinaigrette & Herbs (also Healthy!): Mix together cooked, unpeeled potatoes of any color with chopped onion, fresh herbs such as parsley, basil and thyme, salt and pepper. Dress with mustard vinaigrette. To make dressing, whisk together juice of 1/2 fresh lime, 2 tablespoons olive oil, 1-2 cloves minced garlic, 1/2-1 teaspoon spicy mustard. Add to potato salad and stir gently. Chill.
