Back-to-School!
In a couple of weeks, it will be time to re-program yourself and the kids for the start of another school year. Are you sending off a little one to pre-school or kindergarten? Do you have elementary-aged kids? Are there middle school or high schoolers in the family? My son will be going back to college – how time flies! No matter what age, this time of year is one that means getting up earlier and getting organized in all ways – right? Right. So, I’m here to help you make the most of the adventures that lie ahead, in and out of school. Step #1 is a healthy breakfast. Step #2 is a healthy breakfast. Step #3 is a healthy breakfast. You get the picture – starting the day with nutritious nibbles will definitely put the entire family on a path to daily success! The recipes I’m featuring this month are all about breakfast – some are common and others are out-of-the-box. Try them, please, and let me know if you need more. I wish you all a safe and sane back-to-school!
5 Super Tasty, Super Easy Breakfasts!
- Fruit, Yogurt & Granola: Stack it up. My favorite is blueberries, vanilla yogurt, nutty granola.
- Crackers, Cheese & 100% Juice: Whole grain crackers are a smart choice, as is natural cheese. My favorite combo is Triscuit-type crackers + Swiss cheese slices + 100% grape juice.
- Hardboiled Egg, English muffin, Grapes: Make hardboiled eggs in a batch the night before & chill in fridge. Toast a muffin, wash grapes. Go.
- Nuts & Raisins, 1% Milk: This simple variation of trail mix can be a staple for breakfast or after school snack. My favorite nuts are walnuts, almonds and peanuts. Enjoy with milk.
- Toaster Waffle Sandwich, 1% Milk: Toast a whole grain waffle, cut in half, spread middle with 1% or fat free cottage cheese, sprinkle with cinnamon, drizzle with honey. Enjoy with milk.

Herbed Zucchini & Feta Quiche with a Brown Rice Crust – This looks like a great recipe to use up zucchini from your garden and a very interesting crust idea. From Closet Cooking website.
Mushroom Omelet – Here is a ‘photo recipe’ showing the steps to make a mushroom omelet. You can use mushrooms or whatever veggies you like such as Bell peppers, onions, spinach. From Jamie’s Home Cooking Skills website with UK Chef Jamie Oliver.
Healthy Baked Oatmeal Sweetened with Honey – This is a ‘dressed up’ version of Old Fashioned Oatmeal. I suggest cutting the amount of honey in half so it’s not too sweet. From Balancing Beauty & Bedlam website.
