Easy Meals for Mom!
Since May 11th is Mother’s Day, this issue celebrates all the wonderful moms in your lives. One way to do this is to toss out some ideas for moms to make easy and healthy meals. Another is to toss out some ideas for dads and kids to make an easy meal – for mom! The example my mother set for me was a balanced and healthy meal, but never hard to make. Keeping it simple is often a win-win all around because it saves you time, energy and money. Happy Mother’s Day!!
3 Easy Meals for Mom!
- Weekday Omelet Meal: Omelet with lightly sautéed, sliced mushrooms and/or zucchini; whole wheat toast; cut up fresh pineapple and strawberries, tea or water.
- Weekday Spaghetti Meal: Spaghetti (or spaghetti squash) with easy Homemade Marinara Sauce and grated Parmesan cheese; steamed broccoli; green tossed salad with almonds & light dressing, tea or water.
- Weekend Shrimp Kabob Meal: Grilled Shrimp (or tofu for a vegetarian twist) on skewers brushed with lemon juice-canola oil-herbs mixture; wild & brown rice blend; cut up cucumbers and tomatoes with hummus to dip; fresh sliced mango; tea or water.

Nutrition Inspiration!
Where do you get inspiration to eat nutritiously? There are grocery stores, farmer’s markets and backyard gardens – all with plenty of green leafy vegetables this season.
