Here’s a healthy pizza recipe that really rocks!

What is a Healthy Pizza Recipe?

If you are trying to get your arms around the question, What is a healthy pizza recipe?, then here are some ideas. First, consider the crust which can be whole grain. It’s super easy these days to order whole wheat crust or make your own personal size pizza crusts by using half of a whole wheat pita bread. Next, consider the sauce which can be tomato based, olive oil based or basil pesto based. Finally, consider the toppings which can be cut-up veggies like olives, spinach, broccoli or sweet Bell peppers. The light sprinkling of cheese on top finishes a healthy pizza recipe and makes it irresistible!

Here’s a Healthy Pizza Recipe!

This Portobello Mushroom Pizza Recipe is amazing. It ticks all the boxes — easy, fun, thrifty, full of vegetables, absolutely delicious. And, you guessed it, the mushroom IS the crust!

 

Ingredients (per person):

1 Portobello mushroom cap

2 tablespoons tomato based spaghetti sauce

1 garlic clove – chopped

1 tablespoon onion – chopped

1/4 cup fresh spinach – chopped

1 slice part-skim Mozzarella cheese

Instructions: Gently clean off the mushroom with a dry paper towel. Do not wash it with water. Carefully spoon out the ‘gills’ on the underside of the mushroom and discard them. Place mushroom, with gill-side down, onto a flat pan and bake 10 minutes at 400 degrees F. When timer sounds, take pan out of the oven and turn over the mushroom cap. Layer the ingredients into the ‘cup’ of the mushroom in this order: tomato sauce, garlic, onions, spinach, cheese. Place into the 400 degree F. oven again, for 10 minutes. The cheese will turn golden brown and your pizza will be ready to eat!
