Eggs are Easy and Nutritious Plus Frittata Recipe!

Egg frittata is easy to make on a busy weeknight!

Eggs are Easy

Eggs make an easy and tasty meal when you add a slice of whole grain toast and a colorful fruit salad. As a kid, I loved to decorate eggs and then find them in my Easter basket. I also loved to find them on my breakfast plate, scrambled, or in my French toast, or made into a deviled egg at a backyard picnic. It’s so easy and affordable with eggs, and most everyone I know has some in their fridge all the time.

Eggs are Nutritious

All year long, eggs are a mighty protein option for breakfast, lunch or dinner. Their overall nutrition, at only 70 calories per egg, is impressive. Be sure to ‘click around’ this egg-cellent collection of recipes made with eggs; for example, this one is a skillet egg recipe that works as a meatless choice by substituting the bacon ingredient with a super big handful of fresh spinach.

Egg Frittata Recipe

Ingredients: 6 fresh large eggs; 1/3 cup milk; pinch salt; pinch pepper; 1 teaspoon dried basil or oregano – the one you like best; 1-2 tablespoons extra virgin olive oil; 1 cup chopped veggies like onion, sweet Bell peppers, broccoli, mushrooms; (a big handful of raw chopped spinach, in addition, is delicious too); 1/3 cup grated or shredded cheese such as Parmesan or cheddar.

How to: Preheat oven to 400; Whisk eggs with milk, salt, pepper and dried herbs; Spray a 9-inch pie pan with oil spray; Saute chopped veggies in extra virgin olive oil for 6-8 min until softened over medium heat; Place sauteed veggies (and chopped raw spinach, if you like it) into the pie pan first; Pour whisked egg-milk-salt-pepper-herbs on top; Place into hot oven for 10 minutes; Remove from oven carefully and sprinkle cheese on top; Place back into oven for 15 min. until eggs are set. Cool for 10 minutes, then cut and eat. It is delicious hot or leftover and chilled the next day.
