Banana-Carrot Quick Bread Recipe

Banana Carrot Quick Bread
It’s easy to add carrot nutrition to a favorite banana bread!

The rich nutrition of carrots is a perfect compliment to the natural sweetness of  a simple banana bread.

This recipe can easily be doubled to make 2 loaves and it freezes beautifully. So, next time your bananas get super ripe, give it a try!

Ingredients

  • 2 tablespoons     Butter
  • 2 tablespoons     Extra virgin olive oil (EVOO)
  • 1/4 cup                Applesauce, unsweetened
  • 1/2 cup                Sugar, white or brown
  • 2                           Eggs, large
  • 1 cup                    Flour, white
  • 1 cup                    Flour, whole wheat
  • 1 teaspoon          Baking soda
  • pinch                   Salt (optional)
  • 2 large                 Bananas, very ripe
  • 2 medium           Carrots, grated, about 1 cup
  • 1/2 cup                Nuts, chopped up (optional)

How to

  1. Preheat the oven to 325 degrees F.
  2. Stir or mix butter, EVOO, applesauce, and sugar in a large bowl with a wooden spoon or electric mixer.
  3. Add eggs and stir/mix until smooth.
  4. Combine the dry ingredients in a small bowl, then stir: white flour, whole wheat flour, baking soda and salt.
  5. Stir/mix the dry ingredients into the wet ingredients. Do not over-mix.
  6. Peel and mash up the ripe bananas and peel and grate the carrots into one small bowl.
  7. Add the banana-carrot combo into the dough (and nuts, optional) and mix gently to combine.
  8. Using butter or EVOO, lightly coat a loaf pan, 5 inches x 9 inches.
  9. Bake in the oven at 325 degrees for 50-55 minutes. Test doneness with a small knife in the center of the loaf.
  10. Remove from oven and let sit for 10 minutes, then remove from pan. Cool 20-30 minutes before slicing.
