Corn is a Tasty, High Quality Carb!

September 17, 2024 By Cindy Silver

Fresh Corn
We all love corn-on-the-cob!

There are many tasty carbs out there.

Corn, sweet potato, white potato, pasta, bread, butternut squash, lima beans and more are in the high carb category. They also contain essential nutrients for good health. So, what to do? Enjoy them every day in a sensible portion.

Why and How to Choose & Cook Tasty Carbs

The essential nutrients in high carb foods are, yes, carbohydrates plus fiber plus vitamins and/or minerals. Since we’re talking plant-based foods here, there are also the super important phytochemicals which are helpful in reducing the risk for chronic diseases, boosting the immune system, and slowing down the negative effects of aging – yay!

To be sure you’re choosing a truly healthy carb food, ask yourself these 3 questions:

  1. Is it seasonal? Check here for seasonal foods and choose a wide variety. If you are buying corn during the summer then shop at your local Farmer’s Market.
  2. Is it a simple food, without processing? A single-ingredient carb food is your best choice.
  3. Is it a sensible portion? For a meal side dish, a sensible portion is about 1/2 cup. One small to medium ear of corn-on-the-cob is also a sensible portion.

Then, cook your tasty, high quality carb in a healthy way such as steaming, grilling with a spritz of extra virgin olive oil, sauteing with a spritz of extra virgin olive oil, or roasting in the oven with a spritz of extra virgin olive oil. For some tasty carbs, like corn for example, you can eat it raw in your salad, too.

Be Smart When Enjoying Tasty Carbs

There is a place in your meal for all nutritious foods. Tasty carbs in a sensible portion add essential nutrition to energize your day. They provide you with fiber for a healthier gut and vitamins/minerals for keeping your body functioning well.  Be smart as you plan meals to include tasty, high quality carbs and take advantage of meal planning resources at my e-Store to get started!
