A Healthy Stir Fry Recipe is a Tasty Dinner!

A healthy stir fry recipe became my easy and convenient dinner plan tonight. It was just one of those recipes that fell into place for a few reasons. I had a chunk of soft tofu that I wanted to use up, I had a bag of mixed frozen cauliflower/Italian beans/zucchini, and I had a few tablespoons of chunky peanut butter in the bottom of the jar. So, my tasty dinner was born.

Easy Steps to Make A Healthy Stir Fry Recipe!

1. Gather these ingredients: whole grain angel hair spaghetti or thin spaghetti; frozen veggie mixture with cauliflower; small onion; soft tofu; Roma tomato; oil.

2. Prepare these ingredients: cook the spaghetti; cut the tofu into 1/2 inch cubes; open the frozen veggies; chop up the onion; cut the tomato into small chunks or half slices.

3. Gather these ingredients and make the sauce: In a small bowl, stir together 1/4 cup chunky peanut butter, 2-3 tablespoons soy sauce, 1 teaspoon vinegar, 1 teaspoon garlic powder, 2 tablespoons brown sugar, 1 tablespoon sesame oil. Microwave for 30 seconds on high to melt. Stir everything up. Add 1-2 teaspoons hot water if it seems too thick.

4. Cook the spaghetti: Get out a pan with a lid and cook the spaghetti according to package instructions. Drain spaghetti but do not rinse with cold water.

5. Stir fry the veggies & add peanut-y sauce: While the spaghetti is cooking, stir fry the onion in 1 teaspoon of oil. Add frozen veggies to pan and stir. Cover with a lid to make sure they cook through, about 5-8 minutes. In the last 2 minutes, add the cubes of tofu and stir very gently. Last, add the peanut sauce and tomato chunks and then stir everything up gently.

6. Assemble your one-bowl meal: Get out a bowl. Make the pasta your first layer and top with the veggies-tofu-tomatoes-peanut-y sauce. Eat with chopsticks if you wish.
