Are you tired of sandwiches?
After the first week of kindergarten, my son came home and said to me, “Mom, I’m tired of sandwiches.” Oh boy, I thought, what else can I use as the anchor to his healthy bag lunch? I pulled out all my most creative thoughts and came up with things like whole grain crackers with cheese, bread sticks with peanut butter and honey to dip, and a rolled sandwich on a tortilla.
Are you tired of the same old sandwich?
Unlike my son, I have always been more-or-less a sandwich lover. But I get tired of the same old sandwich. I vary it between tuna salad, hummus and sliced tomatoes and plain old cheese. The advantage to these 3 choices is that not only are they full of good nutrition and cheap but they are less processed than a sandwich made from packaged cold cuts. Whenever you can get away from packaged cold cuts, you are making a healthier sandwich. For school kids, and for yourself, this is definitely a smart path to take!
A school-week of healthier sandwiches!
Monday: Canned tuna or salmon with light mayo or nonfat plain yogurt. Fancier version: add raisins, chopped celery, oregano.
Tuesday: Sliced Swiss or Provolone cheese. Fancier version: add a couple slices of Prosciutto ham.
Wednesday: Hummus and sliced cucumbers. Fancier version: add radish sprouts and olives.
Thursday: Peanut (or sunflower) butter. Fancier version: add chopped or sliced apples and grated carrots.
Friday: Pita pocket with pizza sauce and Mozzarella cheese. Fancier version: add chopped sweet Bell peppers or cut-up grapes.
