Back-To-School with a Healthier Macaroni & Cheese Recipe

This Mac & Cheese is super simple to make at home – try it!

A Home Recipe to Love

I cannot imagine feeding a busy family without macaroni and cheese. It’s just one of those comfort foods that everyone seems to love and it goes with everything. With the kids going back-to-school, wouldn’t it be nice to find a less-processed solution than boxed mac and cheese? I hope you’ll try my recipe and then teach your kids to make it, too! Super Duper Easy Mac & Cheese – Makes 8 servings

Ingredients:

2 Tbsp            Extra Virgin Olive Oil

2-1/2 Cups    Macaroni or Spiral Pasta, uncooked

¼ tsp               Salt

2 Cups            Cheese, shredded – see cooking tip below to try using 2 cheeses, 1 cup each*

3-1/2 Cups     Milk, low fat 1%, or Nonfat skim

 

How To:

  1. Preheat oven to 350 degrees F.
  2. Combine uncooked macaroni/spiral pasta with extra virgin olive oil in a 2-quart baking dish or 13 x 9 inch baking pan. Stir to coat the macaroni/spiral pasta.
  3. Add salt and cheese. Stir gently.
  4. Pour milk over everything. Stir gently.
  5. Bake for about one hour, uncovered, in oven. Do not stir & Do not peek!
  6. After one hour, check to see that top is getting golden and poke with a fork to make sure macaroni is tender.
  7. Remove from oven & let sit for 5-10 min. Enjoy!

Nutrition per serving, using half cheddar and half feta cheese: 280 calories; 35% Daily Value for Calcium

Cooking Tip:

*Try using 2 different kinds of cheese. For example, use ½ Cheddar cheese and ½ Feta cheese, or 1/2 Provolone and 1/2 Mozzarella.
