This one works as a meal or a healthy snack.
In Spain, the traditional Tortilla is well known as comfort food. It’s a popular meal starter at home and it’s easy to find as a snack or tapas around town, too. One thing I especially like about the Spanish Tortilla – a simple egg & onion & potato omelet – is that the whole thing is flavored with delicious extra virgin olive oil. Another thing I like is that it costs very little to make and most family members will like it. Finally, I like it because it reheats so well if there are leftovers.
Recipe for Spanish Tortilla – 4 meal size servings, or 8 snack size (Spanish tapas) servings
Ingredients
- 3 tablespoons Extra virgin olive oil
- 1 medium Potato, cut into 1/2 inch pieces
- 1 medium Onion, chopped up
- 6 large Eggs, whites and yolks
- 1/2 teaspoon Salt
- 1/8 teaspoon Black pepper
How to Make:
- Wash and cut up the potato, and peel and cut the onion.
- Get out a large skillet and heat to medium for 5 minutes. Then, add extra virgin olive oil to pan.
- Put the cut up potato and onion into heated skillet with oil. Cook, stirring a few time, for 8-10 minutes until potato is medium soft.
- Get out 6 fresh eggs and crack them into a small/medium bowl. Add salt and pepper. Whisk together.
- When potato/onion mixture is cooked, gently pour egg mixture into skillet – to join the vegetables.
- Cook for about 8-10 minutes, and after 5 minutes carefully loosen the edges with a spatula or wooden spoon to allow liquid egg to contact the pan. After about 7 minutes, gently turn over the omelet and cook 1-2 minutes longer.
- Remove cooked omelet from pan and cut into serving size pieces.
- Refrigerate any leftovers, covered, for 1-2 days. Reheat gently on low power of microwave.
