Healthy Easter Basket Treats are Fun for Everyone!
I’m excited about Easter partly because my son will be home from college. And, believe it or not, I will be putting together some healthy Easter Basket treats for him, a 20-year-old who likes a good laugh and a good surprise. Over the years, his basket included some creative and unusual things and it always gave me great pleasure to hunt for what I knew were healthy Easter Basket treats. Here is my short list and I welcome your ideas as well:

- School gadgets such as pens, mechanical or colored pencils
- Personal hygiene gadgets such as a wacky/colorful toothbrush & toothpaste (get it — brush after eating that chocolate bunny!)
- Modest gift card of $5 to a favorite store
- Quarters hidden in plastic Easter eggs
- A (not too huge) chocolate Easter bunny
A Fun Recipe for Brunch, Lunch or Dinner!
Bunny Rabbit Salad Recipe – Makes 6 servings
Here’s a recipe that works as a side dish any day of the week! Kids can help by measuring the ingredients, grating the carrots and stirring everything up, with supervision.
3 large Carrots
1 cup Pineapple tidbits or crushed, canned and drained well
1 cup Yogurt, plain, nonfat
½ teaspoon Vanilla extract
½ tablespoon Sugar
- Peel carrots and remove both ends.
- Rinse carrots in cool tap water and pat dry.
- Grate carrots with a hand grater or food processor.
- Place carrots and drained pineapple into a medium sized bowl.
- In a separate small bowl, make a creamy sauce by mixing up the yogurt, vanilla and sugar with a spoon.
- Add sauce to carrots-pineapple and stir everything together.
Nutrition per serving: 60 calories; 0 fat; 0 saturated fat; 0 trans fat; 0 cholesterol; 55 mg sodium; 13 gm carbohydrates; 1 gm fiber; 3 gm protein
Money Saving Tip: Buy the 32 ounce size of plain, nonfat yogurt for a better price.
Time Saving Tip: Mix up the creamy sauce the night before making this recipe. Store covered in the fridge.
Cooking Tip: Add ½ cup of your favorite chopped nuts to this recipe for more nutrition and a great flavor.
