ELT is a Sandwich Big on Flavor and Nutrition

ELT means Egg-Lettuce-Tomato and it’s great!

Sandwiches are a trend that never seem to go out of style.

There’s ham & cheese, roast beef, tuna salad, veggie wrap, and oodles of others. Have you ever wondered, like me, why a BLT is such a favorite? Is it the bacon? Is it a fresh sliced tomato? In my efforts to inspire healthier eating, a BLT just doesn’t do it. Instead, here’s a new sandwich that you could say is inspired by a BLT, is very big on flavor, and is a nutrition superstar – the ELT! Say hello to the Egg, Lettuce, and Tomato Sandwich.

How to Make an ELT Sandwich

  1. Choose the bread. Better nutrition means a whole grain bread like whole wheat, whole oat, or a whole grain wrap.
  2. Lay the leafy greens on one side. There are tons of better nutrition options like baby kale, arugula, Romaine lettuce, red or green leaf lettuce.
  3. Cover the leafy greens with fresh tomato slices. Go with a farm-fresh tomato if you can and you’ll be rewarded with vitamin C, vitamin A, fiber, and wow flavor.
  4. Cook an egg and add it to the bread. There are options here for over lightly, scrambled, poached, or hardboiled. An egg is a better nutrition leader with high quality protein, lutein & zeaxanthin which are good for the eyes. And it tastes great.
  5. Season your ELT. This can go in any direction. Smear Korean gochujang sauce on the bread for a nice flavor and a kick; drizzle the egg with extra virgin olive oil and herbs for a Mediterranean twist; spread basil pesto onto the tomatoes for a zing of wow-flavor.

    I love the variation. Eggs are so filling and I love the flavor. It would be perfect with fresh lettuce and tomato.
