Mediterranean Turkey & Herb Meatloaf Recipe

Mediterranean Meatloaf
Choosing Mediterranean ingredients makes a delicious and nutritious meatloaf! 

Everyone loves comfort food and meatloaf is a perfect choice.

By switching out the ground beef and switching in 93% lean ground turkey, along with flavorful fresh and dried herbs, this is a tasty Mediterranean version of your favorite dinner dish!

Mediterranean Turkey & Herb Meatloaf

Kids can help by cracking the eggs, measuring the dried herbs, and stirring everything together, with supervision.

 Makes 6-8 servings

1-1/2 pounds     Lean ground turkey, 93% lean

½ large              Bell pepper, any color, chopped

1 medium           Red onion, chopped

2 large                 Eggs

2 slices                Whole grain bread, cut up into tiny pieces

¾ teaspoon        Salt

¼ teaspoon        Black pepper

1 teaspoon          Dried oregano

1 teaspoon          Dried basil

¼ cup                 Fresh parsley, chopped then measured

1 teaspoon          Garlic powder

Pinch                   Red pepper flakes

4 tablespoons   Tomato paste

½-3/4 cups      Water, to mix with tomato paste

  1. Preheat the oven to 350 degrees F. Get out a meatloaf-shaped pan, approx. 9 x 6 inches
  2. Prepare and place all ingredients, except tomato paste and water, into a large, mixing bowl.
  3. With very clean hands or a big wooden spoon, mix ingredients well.
  4. Spray pan lightly with oil.
  5. Shape meatloaf and place into the pan.
  6. Whisk together tomato paste and water, then pour ½ over the top of meatloaf and spread evenly. Save the rest for serving over cooked meatloaf.
  7. Bake for 70-75 minutes in the oven. Meatloaf is cooked when a meat thermometer inserted into the middle reads 170 degrees.
