Tomatoes Check All the Boxes of Fresh, Delicious, and Convenient

September 4, 2018 By Cindy Silver

Tomatoes at Summer Market

Imagining meals without tomatoes is hard for me to do. Sometimes I add them to my breakfast with a sliced cucumber and dollop of hummus. Other times I add them to my lunch sandwich -- to make a tasty ELT. At dinner, tomatoes pop up in a side salad, sauce, soup, or just on my plate and ready-to-eat. I don't think I'm alone in counting on tomatoes to be there for me. Maybe you can relate. I've had quite a few grocery store checkout line chats and/or farmer's market chats with total strangers who share their 'tomato love stories' with me. See how many varieties you know here. Fresh and Delicious … [Read more...] about Tomatoes Check All the Boxes of Fresh, Delicious, and Convenient

Chocolate and Banana Cupcake Recipe

June 9, 2017 By Cindy Silver

Chocolate Banana Cupcake

A Dessert that's Perfect for Everyone When I first made and tasted this recipe, I thought it was chocolate-y, moist and not too sweet. For me it was a perfect dessert, but I needed other opinions to help me decide if it was a 'keeper' recipe - or not. So, I asked my grown-up son to try it. After going back for a second one, he commented that it was a perfect muffin for him. Great. Next, I shared a plate of cupcakes with my book co-author, Andrea, so that her family of 5 could do a tasting. All agreed that it was a great dessert. Yay. Then, my good friend, Tomomi, made a batch and asked her … [Read more...] about Chocolate and Banana Cupcake Recipe

How to Grow and Use Fresh Mint

June 8, 2017 By Cindy Silver

Fresh mint in garden

Fresh Mint is an Easy Herb to Grow I grew up in a family of gardeners. My mom mostly enjoyed growing flowers and my dad liked growing vegetables. So, at least in the summer, we had a colorful yard and we also ate a bunch of homegrown vegetables for dinner. Fresh herbs were not a part of the mix for some reason, so I changed that when I got my first job and moved into a very small house of my own. I immediately planted some herbs in a small, sunny garden out back. Partly I grew herbs because they were easy to grow and partly I did it because I was getting very interested in cooking and … [Read more...] about How to Grow and Use Fresh Mint

Mason Jar Salads

December 3, 2014 By Cindy Silver

This is a guest blog by Kaylie Chrismon. One of the worst things about packing a healthy lunch is having a soggy salad. When your salad sits in salad dressing all morning, the spinach and lettuce become wilted and you may even throw it out and choose a not-as-healthy option. Putting your salad in a mason jar and layering the toppings appropriately can keep your salad crisp, fresh, and perfect at lunchtime. Mason jars are also convenient and reusable. How to build your mason jar salad from the bottom up: Bottom layer: your dressing – putting dressing in the bottom keeps it from … [Read more...] about Mason Jar Salads
